Nowadays, shelf life is such an important requirement, it should be of interest to everyone involved in the food chain. There is a growing realization that a high standard of food safety and quality can only be achieved by adopting a comprehensive and integrated approach, covering the whole of the food chain, from farm to table. Food manufactures are balancing between retaining food safety/quality and extending shelf life to reduce food waste, therefore shelf life forms such an important part of the Food Safety- and Quality department. A holistic, integral approach, is however not very common in the baking industry.
